Chai Spices

Ingredients:

2 cups of water

2 cinnamon sticks

5-10 green cardamom pods, crushed/popped open

3 black cardamom pods, crushed/popped open

2 tsp diced ginger

2 tsp fennel seeds

1 tsp ajwain seeds

4 whole cloves

2 cups unhomogenised cow milk

2 tsp loose leaf black tea leaves (organic)

sugar to taste

To brew:

In a small pot start to heat your water adding all your spices.  Bring to a gentle rolling boil and allow to brew for 3-10 minutes. This is important – add the tea and the milk at the same time !   Allow the chai to return to the boil before serving.  Add sugar to taste . Take you cup to your favourite place to sit, relax and enjoy !

This Chair recipe is Ayurvedic.  The spices used work to remove toxins that cause sluggishness in the lymphatic system. The milk and raw sugar have an anabolic action to help build good quality tissue in the body. Adding the milk and tea at the same time prevents the tannins from releasing into the chai, reducing the drying and agitating impact of caffeine.  The result is a balancing and energising beverage.

Optional Extras : star anise, black pepper, licorice root.  Many other healing herbs can be added to chai according to your particular needs and taste.  A herbal variation can be made by leaving out the black tea or replacing black tea with rooibos.  Have some fun with your chai and don’t be afraid to experiment to find just the right concoction to delight your senses …..Enjoy!
